Number of Servings: 6


    6 cups water
    2 cups red lentils
    1 T chili powder
    1 tsp olive oil
    salt to taste
    1 cup minced onion
    1 T cumin seed
    1 tsp ground mustard
    1 cup chopped cilantro
    Juice of 2-3 limes (4-6T bottled lime juice)
    1 bunch spinach leaves chopped small
    1 cup cooked basmati rice
    1T Earth Balance Whipped Buttery Spread


Put lentils in a soup pot with the water, turmeric and salt if desired. Bring to a boil, then reduce to simmer until lentils are tender, about 25 minutes. Puree with wand for a smooth soup.

While the lentils are simmering, slow saute the onion, cumin seed and mustard. When soft, stir in cilantro, stir for another minute then add to the soup. Add lime to taste.

Just before serving, melt Earth Balance in a saute pan, add spinach and pinch of salt and cook until just wilted.

To serve, put a few spoonfuls of room temperature cooked rice in a bowl, divide the spinach into 6 servings, add appropriate amount to each bowl and top with the soup.
