Introduction

This is a variation on Spinach Chicken Bake submitted by Silly_Me. The original was too bland and not filling enough for me, so I added pasta, and changed some of the ingredients to liven it up a bit. Ingredients

    200g cooked chicken breast, diced
    200g dry pasta shapes
    2 cloves garlic, crushed or chopped
    1 large onion, diced
    1 red or green pepper, diced
    260g raw spinach
    400ml natural yoghurt
    ½ tsp dried basil
    ½ tsp dried oregano
    Ground black pepper, to taste
    200g natural cottage cheese
    50g reduced fat cheddar, grated

Directions

Pre-heat the oven to Gas Mark 4 / 180C / 350F.
Boil the pasta according to the packet instructions until cooked.
Meanwhile, saute the garlic, onion and pepper in a frying pan with a little olive oil, and wilt the spinach.
In a medium bowl, combine the yoghurt with the herbs and seasoning.
Mix the pasta with the chicken, spinach and sauted vegetables, then pour into a 3 pint lasagne dish or casserole.
Pour over the yoghurt mixture and stir it through.
Spread the cottage cheese over the top and sprinkle over the grated cheddar.
Bake for 45 minutes.
Allow to rest for 5 minutes before serving with a tossed salad or your favourite vegetable.

    I made the original recipe. I omitted the mayo and added mushrooms. It was delicious. I, too, keep Mrs. Dash on hand and seasoned the chicken prior to cooking it. It gave it a little bite to the flavor. - 7/9/09

    good but i left out the cottage cheese and yoghurt,and added canned tomatoes and added a little bit more garlic - 3/26/09
