Introduction

Ingredients

    1 1/2 cup all purpose flour
    3/4 cup sugar
    1 tsp baking powder
    1 tsp baking soda
    1 tsp cinnamon
    1/2 tsp salt
    3/4 cup Helmann's light mayo
    2 Tbsp milk
    1 1/2 cup graded zucchini
    1/2 cup nuts (i use pecans)
    1/2 cup dried raisins, cranberry or anything you have

Directions

Preheat the oven at 350.
In a bowl, mix well the flour, sugar, baking powder and soda, cinnamon and the salt.
In another bowl, mix together the mayo, milk and egg.
Pour the mayo mixture in the dry ingredients and mix together. Mix in the rest of the ingredients.
Pour in greassed muffin pans and bake for 25 to 30 minutes.
