Ingredients

    24 oz. (uncooked) Snapper
    1 lemon
    1 lime
    1 tbl Smart Balance Light Butter
    1/4 c. Skim Milk
    Lemon Pepper Seasoning
    Minced Garlic
    Pepper
    Basil
    Cooking spray
    Spray Butter

Directions

Spray a shallow glass casserole dish with cooking spray. (I use a 9x11x2 square). Lay fillets in dish without overlapping them. Sprinkle both sides with Lemon Pepper, pepper, garlic, and basil. Squeeze lemon and limes into measuring cup, add melted butter and milk. Stir and pour over fish. Crush crackers in a plastic bag and pour over fish. Spray crackers lightly with spray butter. Cover dish with aluminum foil and cook for 15 minutes at 450 degrees. Remove cover and cook another 5-10 minutes until fish flakes easily with fork. Makes 5 servings.
