In the crockpot, it's a simple and delicious. In the crockpot, it's a simple and delicious.
Number of Servings: 8


    2 chicken leg quarters, bone-in, skinless
    2 tsp unpacked brown sugar
    0.25 cup water
    0.5 cup barbeque sauce
    8 whole wheat sandwich thins


Place chicken quarters in crockpot, on high. Dissolve brown sugar in 1/4 cup of water and pour over chicken. Let cook about 2 hours. At this time the chicken should be cooked completely through. Remove chicken from crockpot, leaving the juices. Add barbeque sauce to crockpot, stir and turn down to low. Remove chicken from the bones and shred (or dice). Add back to sauce. Let cook, uncovered, on low for another 2 hours. Serve on sandwich thins. Makes 8
