    540g (3 cups) quinoa, rinsed well
    1 qt. water
    1/3 cup soy sauce
    1 tsp. ground ginger
    3 cloves garlic, minced
    1 cup sliced scallions


In a large kettle, combine everything except the scallions. Bring to a boil. Reduce heat and simmer for about 20 minutes or until liquid is all absorbed and quinoa is tender. Stir with a fork. Toss with scallions and serve. Makes about 7-1/2 cups of about 195g each.
