    *Turkey, Ground turkey, 93% lean, 16 oz
    Zucchini, baby, 1 large
    Carrots, raw, 1 large
    Garlic, 4 cloves
    Onions, raw, 1 cup, chopped
    Red Ripe Tomatoes, 1 cup cherry tomatoes
    Olive Oil, Extra Virgin, 1 tbs
    *Cumin seed, 1 tbsp
    *7 Mission whole wheat tortillas,
    Cheddar Cheese, 1 cup, shredded
    3 Chipotles in Adobo
    1 cup mrs. renfro's gourmet green salsa


preheat oven to 400. brown turkey in saute pan. meanwhile, add garlic, onion, chipotles, tomatoes, zucchini and carrots to food processor. porcess until finely chopped. groind cumin seed, add to turkey to coat. add salt and pepper to taste. add vegetable mixture to pan, along with salsa. cook down untill liquid evaporates. spray 9x13 in. baking dish with cooking spray. brush tortilla lightly with olive oil, flip over - put 1/8th mixture in tortilla, with a little cheese. roll tightly. repeat until all trtillas are rolled and in dish. sprinkle with remaining cheese. bake, covered for 10 minutes, then uncovered for 10 minutes. enjoy!
Serves 8 - 1 burrito each. i like to serve with fresh salsa and fat free plain yogurt.
