Number of Servings: 24

Ingredients

    1 cup Splenda
    1 cup light or fat free sour cream
    1/4 cup oil (can use unsweetened applesauce for half of the oil. This would cut down on the calories
    1-2 eggs (nutrition info here is calculated for 1 egg)
    1 tsp vanilla
    2 tsp baking soda (can use 1 tsp baking soda & 1 tsp baking soda, especially if watching your sodium
    dash of salt, optional
    2 C ww flour
    2- 3 fresh or frozen peaches, or 1 16 oz can (add juice as well! you can add more flour is needed)
    walnuts- 1/2 cup, optional
    cooking spray
    cinnamon, optional 1-tsp up to 1 TBSP, to taste

Directions

Preheat oven to 350 deg. spray bread pans with cooking spray. mix together everything but the peaches, then add in peaches & mix/ blend thoroughly (like you would for banana bread). Pour dough into bread pans, bake in oven 350 deg for 1 hour.
my friend I got this recipe from says you can use other kinds of fruit in place of the peaches.

    Very Good
    This was quite yummy. I did have to add some milk, as the batter was too thick. I put half the batter in my donut tins and made peach donuts, too. - 8/22/10
