    3.5 Chuck Roast, all excess fat removed
    3 TBL Mayo, mixed with 1 TSP Water
    4 TBL Minced Garlic
    4 TBL Minced Garlic
    1 TSP Onion Powder
    1 TBL Dried Thyme
    1 TBL Dried Rosemary
    1.5 TBL Fresh Ground Pepper
    2 TSP Salt


Night before cover roast with 4 TBL of garlic and place covered in refrigerator

1 Hour Before, place on counter and let come to room temp, this allows the fibers to relax which will make for a better roast

Pre-heat oven to 500 degrees

Remove garlic from roast, but DO NOT rinse it off.
Mix Mayo, water, and the new 4 TBL of Garlic and place all over roast. Mix all dry ingredients in samll bowl and rub over roast. Place in oven
If using 3.5-4lb roast bake at 500 for 15 minutes, turn the oven off, and let sit in the oven for 15 minutes per pound. So a 4 pound roast will take 1 hr and 15 minutes. If you like it rare decrease initial cooking time to 13 minutes.PLEASE DO NOT OPEN OVEN. This is Crucial! Remove from oven and lest rest 20 minutes before cutting to allow the juices to redistribute.
