    1 T Extra Light Olive Oil
    1 large sweet onion, diced
    2 cans Crushed Tomatoes
    2 cans Vegetable Juice Cocktail (V8)
    1 can Hunts Diced Fire Roasted Tomatoes
    1 can Hunts Canned Petite Diced Tomatoes
    1 can Pinto beans, drained and rinsed
    1 can Black beans, drained and rinsed
    1 c. Yellow Sweet Corn, Frozen
    1 each large sweet green and yellow pepper, diced
    1 c. Bob's Red Mill TVP,

    2-3 bay leaves
    2 T cumin
    2-3 T chili powder
    2-3 toes garlic
    1 t fresh ground pepper
    salt to taste


saute onion in oil til lightly brown. Add remaining ingredients stirring with each addition. Add spices and simmer 2-3 hours. Allowing to stand overnight increases flavor depth.
