Ingredients

1 lb ground turkey
12 Tomatillos, husks removed adn rinsed thoroughly, coarsely chopped.
1/2 onion coarsley chopped
3-4 garlic cloves
2 Chipotle peppers in adobo with about 1 Tbls of sauce, chopped.
Zest of one lime
1 Tblsp. ground cumin
Salt and black pepper
1/2 cup chopped cilantro
**OPTIONAL and not included in calorie count**
Orowheat sandwich thins
1 avocado mashed with lime juice
Red onion slices
Tomato Slices
Shredded cheddar
Directions
Brown turkey in a large non-stick skillet, breaking the meat into small pieces as it cooks.
While turkey cooks place tomatillos, onions and garlic in a food processer and pulse until it reaches a salsa-like texture. Once turkey is browned, add tomatillo mixture along with the chopped chipotles, adobo sauce, lime zest, cumin, salt and pepper to taste.
Let simmer for about 10-15 minutes. Just before serving, stir in chopped cilantro
To assemble, toast sandwich thins slightly. This helps them to hold up better when eating. Place a 1/2 cup of turkey mixture on one side of sandwich thin. Add additional toppings as desired.
I served with black beans. My husband ate it open faced with beans on top like a tostada.
