Number of Servings: 8


    2 cups dried lentils, rinsed and drained
    2 small onions, chopped
    2 green peppers, chopped
    4 cloves garlic, minced
    2 tsp. cumin
    2 tsp. red (cayenne) pepepr)
    2 tsp. ground black pepper
    1 can diced tomatoes
    1 jar salsa
    Flour Tortillas


Combine all ingredients except tomatoes, salsa and tortillas in large pot. Bring to a boil, stirring to precvent l;entils from sticking to bottom of pot. Lower heat and simmer for 45 minutes, or until lentils get soft and a bit mushy. Stir in salsa and tomoatoes and heat through. Serve on flour tortillas with more salsa, cheese, lettuce, or whatever toppings to like.
