    Brown Sugar, 3 tbs, packed
    Ginger, ground, 1 tsp
    Orange Juice, .25 cup
    Sweet potato, 2 sweetpotato, 5" long
    Pork Shoulder (pork butt, picnic roast), 32 oz
    Apples, fresh, 3 medium


Cut sweet potato into large chunks and place in a single layer in crock pot. Trim pork roast and place on top of sweet potato. Core and thinly slice apples, then distribute around and above roast. Combine all remaining ingredient and pour evenly over apples, roast, and sweet potatoes. Cook on low setting approximately 4 hours or until internal temperature reaches 155 degrees. Let stand 15 minutes before slicing.
