Ingredients

    3 Medium Red Skin Potatoes, washed and quartered (skin on)
    4 cloves garlic, peeled and finely chopped
    1/2 cup fat free 1/2 and 1/2
    2 Tbsp Smart Balance Buttery Light Spread
    1 tsp sea salt
    1 tsp cracked black pepper

Directions

In medium sauce pan add enough water to cover potatoes and 1 tsp salt. Boil Potatoes until fork tender (approx 15 - 20 minutes). While potatoes are boiling spray a small saute pan with olive oil cooking spray. Saute garlic over medium to medium low heat until soft and fragrant (be careful not to burn). Drain cooked potatoes and return to pan. Add garlic, milk, buttery spread and black pepper. Mash with potatoe masher until well blended but still slightly chunky (I prefer mine this way, but you can mash until smooth or whip with an electric mixer if you prefer).
Makes 4 servings.
