This is a great hearty meal which when paired with Brown rice can warm you up and give you tons of nutrients. Ingredients

2 tablespoons olive oil
1 1/2 cups chopped onions (or frozen)
8 large garlic cloves, chopped
3 pounds lean ground beef
5 tablespoons Mexican chili powder
2 tsp cayenne pepper
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1 14.5oz can diced mexican fiesta tomatoes
1 14.5oz can stewed Mexican style tomatoes
2 tsp low sodium better than bouillon chicken base plus 2cups of water
1 1/2 5.5oz can low sodium V8 juice
1 15oz can prepared blackbeans (be sure to drain and rinse them)
1 4oz can fire roasted green chillis
3 large whole mushrooms
3 cups fresh spinach

Heat oil in heavy large pot medium-high heat. Add onions and garlic. Sauté until onions are translucent, about 8 minutes. Add meat and sauté until brown, breaking up meat with back of spoon, about 5 minutes. Add chili powder, cayenne pepper, basil, oregano and thyme. Stir 2 minutes. Mix in tomatoes, chicken base & water, and v8 juice. Simmer until thickened to desired consistency, stirring occasionally to prevent sticking, about 45 minutes. Mix in beans and spinach. Simmer 5 minutes. Season to taste with salt and pepper. (Can be prepared 3 days ahead. Refrigerate until cold, then cover. Rewarm over low heat before serving.)
