Found this recipe at Hungry Girl and made it into a 1 block Zone snack. Found this recipe at Hungry Girl and made it into a 1 block Zone snack.
Number of Servings: 8


    Libbys pure pumpkin canned, 2 cup (remove)
    Milk, canned, evaporated, nonfat, 1.5 cup (remove)
    Mori-Nu, Tofu, silken, lite firm, 1 slice (remove)
    Egg, fresh, 1 large (remove)
    Egg white, 2 serving (remove)
    Splenda No Calorie Sweetener, 20 tsp (remove)
    Pumpkin Pie spice, 2 tsp (remove)
    1/3 cup slivered almonds


1. Preheat oven to 350 degrees.

2. Spray pie dish with nonstick spray and set aside.

3. Mix all ingredients, except almonds, in a blender until smooth.

4. Pour into pie dish. Sprinkle almonds evenly around top of pie.

5. Bake in oven 45 minutes. (It will remain a little soft, like pie filling.)

6. Once ready to serve, cut into 8 even pieces.

7. May be served with FF cool whip (not counted in nutritional info.)

Makes 8 servings. Refrigerate any remaining pie.

  • Love HG recipes, and this looks like a "tweek" I would be happy with as well. After reading it, I was thinking that I could make it in 8 individual servings, in custard cups. Thank you, for sharing your version. - 10/7/09

    For sure you could make individual servings. May not have to bake as long, (?) I would watch closely after 25 to 30 minutes. Another thing, you may want to add the almonds after baking. I wanted to edit that part but could find no way to do it. Thanks for commenting.
