    * 8 oz crushed chocolate graham crackers (approx. 16 whole crackers)
    * 2 tablespoons unsweetened cocoa powder
    * 1/4 teaspoon salt
    * 3/4 Cup Egg Substitute (Egg Beaters Original is what I used)
    * 1/3 cup Splenda Brown Sugar Substitute
    * 1/3 cup Spenda Sugar Substitute
    * 2 teaspoons instant coffee granules
    * 2 teaspoons vanilla extract
    * 1/4 cup sugar free semisweet chocolate chips


1. Preheat oven to 300F.
2. Lightly coat an 8x11 baking dish with cooking spray.
3. If you don't already have your crackers crushed into crumbs - Pulse graham crackers into crumbs in a food processor or place in a large plastic bag and crush with a rolling pin. Set aside.
4. Transfer to a small bowl; add cocoa and salt and mix well.
5. Combine egg substitute, egg white, and both Splendas in a large bowl.
6. Beat with an electric mixer at high speed until thickened, about 2 minutes.
7. Blend in coffee granules and vanilla.
8. Gently fold in chocolate chips and the reserved crumbs.
9. Scrape the batter into the prepared baking dish, spreading evenly.
10. Bake the brownies until the top springs back when lightly touched, approx. 25 to 30 minutes.
11. Let cool completely in the pan on a wire rack before cutting.
12. Cut into 24 equal squares and serve.
