    1 pkg Vanilla Pudding (instant)
    mix to pkg directions
    2 cups skim milk
    1 1/2 cup coconut (1/2 cup reserved for topping)
    1 baked pie crust
    2 egg whites whipped to stiff peaks


Mix pudding and milk blending well, add coconut and pour into baked pie shell add whipped egg whites on top and sprinkle with coconut flakes and toast in oven until slightly browned on top.
