Number of Servings: 8


    2 tbsp Saffower Oil (or whatever you prefer)

    3 Carrots, peeled
    2 Parsnips, peeled
    3 Peppers (red, yellow and red)
    2 Chilis (serrano or your preference)

    1 medium zucchini, diced
    1 medium yellow squash, diced
    2 stalks celery, diced

    2 Tomatoes, chopped
    2 cloves garlic, diced
    1 tsp dill (more or different spices to your taste)

    6 oz turkey pastrami, chopped (OPTIONAL) meat substitute works well, too

    12 egg whites
    6 egg yolks
    1 tsp chipotle

    Salt and Pepper


Makes 8 wedges.

Heat oven to 375. Place carrots, parsnips, peppers and chilis on a cookie sheet and place in oven. Bake until they are soft. Times will vary depending on the size of the veggies. Pull out the smaller pieces first.

Once roasted, peel and dice the peppers and chop the other veggies and set aside.

While roasting, seperate your eggs and mix the chipotle, salt and pepper with them. Beat them lightly and set aside. (It's ok if they get to room temp, makes the eggs cook better)

Heat oil in skillet. Over med/hi cook the carrots, zucchini and yellow squash until tender. I added so salt and pepper here.

Add the tomatoes, garlic, dill, and roasted veggies. Cook until all items are pleasantly soft. Add meat sub or turkey or nothing at this point. Mix well.

Pour egg mixture over veggies. I like to mix the eggs and veggies a little at the beginning to help get them coated, but then let them just sit.
Once it's set when you shake it, but still shiny on top, put it under the broiler until GBD. (golden brown and delicious)

Top with your favorite condiment, or not!
