Introduction

I got this recipe from a friend and modified it just a bit. I made half with butter, half without (using egg whites instead before dipping in bread crumbs). Obviously the recipe with butter is delicious, but the other one was pretty good as well. I add lots of cayenne and crushed red pepper flakes, so it has good flavor. Ingredients

    8 boneless, skinless chicken breast halves
    2 cups Panko (Japanese bread crumbs)
    1 stick unsalted butter, softened (or 6 egg whites)
    2T cayenne pepper
    2 tsp salt
    2 tsp black pepper
    Red pepper flakes to taste

Directions

Preheat oven to 450 degrees. Rinse and dry chicken. In one bowl, mix the Panko, 1T cayenne, 1 tsp salt, 1 tsp black pepper, and red pepper flakes to taste. In another bowl, mix the butter, 1T cayenne, 1 tsp salt, 1 tsp black pepper, and red pepper flakes. Brush both sides of chicken breasts with the butter mixture (or dip in egg whites). Dip each chicken breast in Panko mixture, covering both sides equally. Place chicken breasts in two shallow baking dishes sprayed with Pam. Bake for 30-40 minutes until browned and chicken is fully cooked.

*Recipe makes 8 pieces of chicken.

    Incredible!
    This was excellent. It was a bit spicy for my family so next time we will cut down on the cayenne. That's all a matter of taste. This chicken tasted incredible. Even my VERY picky eater ate it and loved it. (We used egg whites instead of butter) - 6/15/12
