Introduction

Ingredients

    Spinach, frozen, 1 package (10 oz)
    3 Eggs, large
    Cheddar Cheese, 8 oz **
    Cottage Cheese, Nonfat, 16 oz

    **can sub 4 oz feta cheese with 4 oz cheddar

Directions

THAW AND DRAIN SPINACH (squeeze out all excess water), place in medium bowl.
Beat together eggs and add to spinach.
Add cottage cheese.
Shredd cheddar cheese and add to mixture. (you can put 1/2 cheddar, 1/2 feta for a nice Greek taste!)
Mix all ingredients. Spoon into a lightly buttered 8X8 square pan (glass or otherwise).
Heat in 350 degree oven for 45 min.

    Tried it on my family today before I make it for a ladies' brunch next month. It passed the test. I used half feta and I think next time I will add some dill. Very easy to make. Make sure the spinach is fully thawed out so all the ingredients can blend well. - 11/26/08

    I added 1tbsp dill, 2tbsp minced onion, a little italian seasoning, a little garlic poweder, and 1/8 cup morningstar soy crumbles. I also sprinkled a little parmesan cheese on top. - 9/22/07
