    2 lb boneless skinless chicken breasts, in chunks
    1 c. diced onion
    1 clove garlic, chopped
    1 15 ounce can chick peas
    1 14 ounce can diced tomatoes
    1 eggplant, cubed
    1 tsp cumin
    1tsp tumeric
    1 tsp allspice


This is a pressure cooker recipe. Brown chicken and onions in a little non-stick spray in pressure cooker. Add garlic and sautee a minute more. Add all other ingredients and put on lid to bring up to pressure quickly. Once at pressure, cook three minutes. Turn off heat, and let pressure return to normal on its own (about 10 minutes). Serve over brown rice, spritz with lemon.
