Introduction

My husband requested homemade meatballs for dinner so I figured I would check out the nutrition data for myself. I was suprised that they were not all that bad for you. Ingredients

    2 lbs. 93% lean ground beef
    2 large egg
    1/2 tsp. garlic powder
    1 tbsp. chopped fresh parsley
    1/4 pepper
    1/4 salt
    3 tbsp. grated Pecorino Romano cheese
    1/2 cup super skim milk
    4 slices bread with hard crust removed. I used Sara Lee soft and smooth whole grain
    Pam cooking spray

Directions

Break bread into small pieces and mix with milk until mushy with no chunks of bread. Mix all ingredints in large bowl. Spray a 9x13 x2 pan with Pam. Shape into 20-2 oz meatballs. (I use a meatball making tool) I make the meatballs with the tool first and then go back and roll them into balls. I also spray my hands with Pam so the meat doesn't stick to them. Cook at 375 for 45-60 min. I normaly turn them halfway through so they are browned on each side. Plus they don't have a lot of fat so you have to watch so they don't burn. Makes 20- 2 oz. meatballs
