    1 Tbsp olive oil
    1/4 cup finely chopped onion
    1 tsp minced garlic
    1 cup long grain brown rice, uncooked
    2 1/4 cups low sodium vegetable broth
    1 cup asparagus cut into small pieces
    1/4 cup unsalted cashews, coarsely chopped


In medium sauce pan saute onion and garlic in olive oil just until softened. Add rice and broth to pan. Bring to boil, then reduce heat to low, cover and simmer for 30 minutes. Add asparagus to rice and simmer, coverd for additional 10 - 15 minutes until liquid is absorbed and rice is tender. Remove from heat, add cashews, and stir to combine.
Makes 4 servings.
