Introduction

Number of Servings: 4

Ingredients

    1 tbsp vegetable oil
    2 ½ tbsp sugar
    1 cup walnut halves
    1 red bell pepper, cut into 1-inch squares
    4 scallions cut into 1-inch lengths
    2 cloves garlic, minced
    1 tbsp minced fresh ginger
    1 pound skinless, boneless chicken breasts, cut into 1-inch chunks
    1 cup chicken broth
    1 tbsp soy sauce
    1 tsp sesame oil
    1 ½ tsp cornstarch


Directions

1. In a medium skillet, heat 1 tsp of the vegetable oil over moderate heat. Add 2 tbsp of the sugar, stirring to combine. Add the walnuts and cook, stirring constantly, for 7 minutes or until the walnuts are nicely coated and lightly crisped; set aside.
2. In a large non-stick skillet, heat the remaining 2 tsp vegetable oil over moderately high heat. Add the bell pepper and sauté for 2 minutes or until crisp-tender. Add the scallions, garlic, and ginger, and cook for 2 minutes. Ad the chicken and sauté for 4 minutes or until o longer pink.
3. In a small bowl, whisk the broth, soy sauce, sesame oil, and the remaining 1 ½ tsp sugar into the cornstarch. Add to the pan, bring to a boil and cook for 3 minutes or until the sauce in lightly thickened and the chicken is cooked through. Stir in the walnuts. Serves 4.
