Introduction

Ingredients

    4 t. olive oil
    1.5 cup onions, chopped
    4 10 oz. packages chopped frozen spinach
    2 cloves garlic or 1 teaspoon garlic powder
    1 egg or 1/4 cup egg substitute
    6 oz. firm tofu
    1/2 cup crumbled feta cheese
    1 1/3 cup rolled oats

Directions

Preheat oven to 350F. In a non-stick pan, heat the oil over medium heat. Cook the onion until slightly browned and soft, about 5 minutes. Add crumbled tofu and garlic and stir until lightly browned. Add spinach and stir until heated through. Add salt to taste. Set aside.
In a large bowl, beat egg and crumble in feta. Add spinach mixture and set aside.
In a food processor or blender, mix until lightly ground but not too fine. Add 1/3 cup of the oats to spinach mixture and the rest into bottom of a large pie plate. Spoon spinach mixture on top and bake for 45 minutes.
Serve with Wasa crackers and fruit for a balanced Zone meal. Serves about 5
