    2 Medium Courgettes/zucchini, sliced
    1 tbsp olive oil
    1 small onion, chopped
    1 green chilli, chopped
    2 eggs
    1/2 tsp parikia
    100g chedder cheese


Serves 2

1:Preheat Oven to 170C/340F/Gas Mark 5
2: Grease a casserole dish
3: Fry the Courgettes in a pan. Transfer to the dish
4: Fry onions and chilli until they brown. Add to courgettes
5: Beat eggs then add paprika. Pour over the ingredients in the dish
6: Sprinkle over the cheese
7: Bake in Oven for 25-35 mins (Cheese should brown and eggs should set)
