Authentic Irish Hotpot!! Authentic Irish Hotpot!!
Number of Servings: 6


    1 lb. Lamb Stew Meat
    1 1/2 Tbls. Corn Starch
    1 Lg Onion
    3 Carrots (sliced)
    3 Potatos (sliced)
    1 can Beef Boullion
    1 c. Water


Coat Lamb with Corn Starch in a large bowl.

Brown meat and onion, then set aside in same bowl used to coat meat.

Slice potatos and carrots.

Add meat and onion mixture (including juices) to either a cassorole dish or crock pot. Add Boulion, water and seasonings. Stir well.

Finally add veg to mixture. If using cassorole dish layer carrots and then potatos. Liquid should just cover. Using a crock pot layering is not needed.

Cook for 2 hours in oven at 350. Cook on high 2 hours in crockpot.

Makes 6 servings. (1 cup each)
