Introduction

Ingredients

kolhrabi, peeled and sliced, 5 cups
sweet potato, peeled and diced, 3 potatoes
white onion, peeled and diced, 2 cups
fat free, low sodium veg broth (as needed for broth)
sage (fresh sprigs, ground as tablespoon)
kale, chopped from woody spine, diced, 2 cups
winter squash, raw or cooked, diced, 1 squash
apple, diced, 1 apple
water as needed
1/2 cup of 0% fat free GREEK yogurt, stirred in at the end of cooking time
Directions
Assume 1 cup per serving.
Roast vegetables with olive oil spray at 450 degrees until crunchy and "done."
In Vitamix high speed blender, add in kale, kohlrabi and all veggies, broth, apple, water, sage sprigs.
Mix at high speed. Turn out into sauce pan to heat through, for lunches, or dinner. Add in 0.5 cup 0% fat free Greek yogurt, for a touch of creaminess to the soup.
Can be frozen for future lunches.
Serve with a sprinkle of nutmeg on top, and sprigs of sage.
