    1 chicken breast, boneless and skinless
    1 cup fresh spinach
    2 tbsp. balsamic vinager
    1 dash each salt and black pepper
    Olive Oil Cooking Spray
    1/2 roma tomato, cut into slices
    1/4 cup walnuts, chopped and lightly toasted


Spray pan with olive oil cooking spray and brown chicken until done. When chicken is done remove from pan. Add spinach to pan with balsamic vinager and wilt. When wilted, add chopped toasted walnuts, salt and pepper. Remove from heat. Cut chicken into slices and add to spinach mixture onto serving plate. Garnich with tomato slices.

Makes one serving.
