Introduction

This recipe is from providentliving.org, but I substitute applesauce for the 1/2 cup of melted butter. They don't get a nice round muffin top on them, but they taste really good. Ingredients

    2 cups whole wheat flour
    1 cup brown sugar
    1/4 tsp. baking soda
    1 cup milk
    1/2 cup applesauce (or 1/2 cup butter,melted)
    1 egg
    1 tsp. vanilla

Directions

Mix dry ingredients together in a medium-sized bowl. In large measuring cup combine liquid ingredients. Pour over dry ingredients and stir until moistened. Spoon into greased muffin tins and bake at 350 degrees fore 15 minutes. Makes 14 muffins.
