Introduction

Ingredients

    3/4 lb Extra Lean Ground Beef

    2 Cloves Garlic Minced

    1 1/2 t Dried Oregano Leaves

    2 C Gia Russa Spaghetti Sauce

    1 Large Tomato Chopped

    1 Large Egg

    1 16oz Container Fat Free Cottage Cheese

    1/4 C Grated Parmesan Cheese

    2 C Small Pasta Shells

    1 7oz Package Shredded Mozzarella Cheese divided

Directions

Makes 9 servings See below for freezer instructions

Heat oven to 375 degrees.

Cook pasta according to package directions to al dente.

Brown meat with garlic and oregano in large saucepan. Stir in spaghetti sauce; simmer 5 minutes stirring occasionally. Remove from heat and stir in chopped tomato.

Combine meat sauce with the cooked shells.

Mix egg, cottage cheese and parmesan.

Spray pan with cooking spray. (If you are making the whole recipe you will need a 13x9 dish. You'll need to pare down the dish if you split the recipe)

Add one third of the meat mixture to the pan. Layer one half of the cheese mixture. Repeat. Top with final layer of meat mixture.

Cover pan with foil and bake for 30 minutes or until heated through. Uncover and top with remaining mozzarella cheese. Bake uncovered until cheese is melted (about 5 minutes). Let stand 5 minutes before serving.

***Freezing Instructions
You can separate this recipe into three meals with 3 servings each. You just need three oven safe pans. I use the foil kind. If you don't want to assemble them in the foil pans you could use freezer safe plastic bags. Simply divide the meat/pasta mixture and the cheese mixture into thirds. Place 1/3 meat/pasta mixture into each of three bags and place 1/3 cheese mixture into three separate bags. When you are ready to cook, thaw one bag each meat/sauce and cheese in the refrigerator and follow directions above.
