    2 boneless skinless chicken breasts cut into 1 inch pieces
    2 large bell peppers coarsely chopped
    1 small onion chopped
    1 can diced tomatoes
    1 cup uncooked white rice
    1 cup water
    1 package of taco seasoning
    1 tsp. salt
    1 tsp black pepper
    1 tsp ground pepper
    (Shredded Cheese optional) not included in nutritional info


Combine all ingredients into crock pot cook on low 6-8 hours or high 3-4 hours. Garnish with cheese if desired.

    Tried this meal tonight! It was very tasty and a breeze to throw together into the crockpot. I may use the leftovers as a filler for enchiladas, for something different. I cooked mine for almost 8 hours, could have been shut-off at 6 hours. - 9/10/10
