Introduction

orzo orzo

Ingredients

    8 oz. uncooked orzo pasta
    1 14.5 oz. can of low sodium chicken broth (or vegetable broth)
    1 clove garlic, minced

Directions

saute garlic in olive oil in a large saucepan. Add the broth and bring to a boil. Add the orzo, stir, and cover. Cook until almost all of the liquid has been absorbed and the pasta is tender, 15-20 minutes, stirring occasionally.

Add salt and pepper to taste and serve.


Makes 4 servings.


VARIATIONS:

Add 1/2 cup chopped onion when sauteeing the garlic.

Stir in 1/4 cup grated parmesan or pecorino cheese when finished cooking.
