    2 egg whites
    Pinch salt
    1 tsp almond extract
    6 TBS sugar
    1 cup flaked coconut


Beat egg whites, salt, almond extract in small bowl on medium until soft peaks form. Add sugar 1 tablespoon at a time while beating on high until stiff peaks form. Fold in coconut. Drop tablespoonfuls 2 inches apart on greased baking sheet. Bake 25 mins at 300. Should be lightly browned on top.

Note: I used sweetened flaked coconut in my nutrition calculations. Can also use unsweetened. You can also substitute vanilla extract for almond.
