Introduction

Based on some concoction online somewhere. The garlic sounds like a lot, but it really mellows out in the cooking process. The chicken broth instead of water is a low-calorie way to add flavor - vegetarians can easily use vegetable broth for similar effect. Makes about 4 1-cup servings. Ingredients

    1 c dry couscous
    1 Tbsp. EVOO
    2 Tbsp. curry powder
    5 cloves garlic
    2 scallions, chopped
    1.5 c chicken broth
    4 dried apricot halves, finely chopped
    About 2 Tbsp. dried cranberries, roughly chopped
    Freshly ground black pepper (you shouldn't need much or any salt because of the broth)

Directions

Heat oil, saute garlic, onion and dried fruits, add curry. Add chicken broth, bring to boil, add couscous, return to boil, turn off heat and cover, 5-10 min. Fluff with fork.
