Ingredients

    2 C vegetable soup stock
    3/4 C lentils (brown)
    1/4 C barley
    2 med. carrots, chopped
    1 clove garlic
    1 large stalk celery with leaves, diced
    1 t onion powder
    2 C V-8 juice
    sprinkle curry

Directions

In a soup pan, bring soup stock, letntils, barley and veggies to a boil. Reduce heat to lowest temperature, cover, and simmer 35 minutes. Add the V-8 juice and curry to taste, cover and simmer 30 minutes.

Yield: 3-1/2 C stew

    Good winter comfort food - definitely stew - thick and hearty. I added salt & pepper and went heavy on the curry. Super quick and easy! - 2/6/08
