Ingredients

6 large raw potatoes, washed, peeled, & diced
4 Tblsp. Smart Balance Light Buttery Spread
1 cup canned nonfat evaporated milk
2 cups skim milk
1/2 cup onion, diced
1 cup celery, diced
1 or 2 jalapeno peppers, seeded and diced
1 cup shredded Cheddar cheese, low fat
1/2 cup cream cheese, low fat
1/2 tsp. paprika
1 tsp. bl;ack pepper
1 tsp. garlic powder
Directions
1. Wash, peel, and dice potatoes and celery
2. Place potatoes and celery in large pot and cover with water.
3. Add diced jalapeno and onion
4. Cook until tender but not mushy
5. Drain, about 1 cup water in pot
6. Add garlic powder, paprika, black pepper
7. Add 1 cup evaporated milk and about 2 cups skim milk (enough to cover potatoes generously
8. Add Cheddar and cream cheese. Stir well.
9. Cover and cook on low heat until cheeses are melted. Stir occasionally to keep from sticking or burning.
Makes 6-8 1 cup servings.

This sounded better than it tasted. Even with the jalapeno, the soup was very VERY bland. Next time I will use no salt added chicken broth to cook the potatoes and vegetables in. That should give it a bit more flavour as well as maybe sprinkling some bacon bits on top. - 10/12/11
