Ingredients

    1 Fresh Butternut squash
    1/4 cup olive oil
    1/4 cup brown sugar
    1 Tablespoon Cumin
    10 Flour tortillas
    8 oz Feta Cheese

Directions

Peel and dice butternut squash. Toss with olive oil, brown sugar and cumin. Bake at 400 for 25 minutes. Mash leaving chunks.

Divide squash into 10 tortillas. Top with feta. Bake 10 minutes.

Makes 10 quesadillas
