Ingredients

    4 tbs Extra Virgin Olive Oil
    4 tbsp Balsamic Vinegarette
    6 Roma Tomatos
    5 Green or Black Olives
    10 Fresh Basil Leaves
    1/4 cup Skim Mozzarella Cheese (shredded or balls)

Directions

This is a really easy recipe. Cut tomatos into slices, you can use any type of tomato, I prefer roma tomatos. Place in a glass casserole dish. Slice the olives and add them to the dish. Chop fresh basil and add to dish. If you don't like basil, you can substitue fresh spinach leaves. Add the mozzarella balls or shredded cheese. Then add olive oil and balsamic vinegarette, mix and enjoy!
