This is a recipe that I have "skinnified". One of my family's favs. This is a recipe that I have "skinnified". One of my family's favs.
Number of Servings: 8


    1/2 c lemon juice
    1/2 c soy sauce (I use light, for less sodium)
    1/4 c sugar (I use Splenda)
    2 T brown sugar
    3 cloves garlic, minced
    1 t fresh ginger, minced
    1/2 t Garlic Powder
    1/2 t ground ginger
    2 T water
    8 pieces of chicken - thighs for everyone else and breast-half for me


Combine the first 9 ingredients in a large, deep pan. Bring to a boil and stir until the sugar melts. Add the chicken and return to a boil. Reduce heat and simmer for 35 - 45 minutes, until chicken is done. Turn chicken several times during the cooking. At the end of cooking, remove chicken and turn heat up to high to reduce the sauce. Makes 8 servings (1 piece per person). Great served with rice and steamed broccoli.
