Ingredients

    100 grams red potato
    50 grams zucchini
    Half a red or orange pepper
    50 grams frozen sweetcorn
    50 grams frozen peas
    1 stalk celery
    100 grams broccoli
    2 whole medium tomatoes
    100 grams vegetable stock (heaped teaspoon of stock powder, made up with water to whatever consistency you want)

Directions

Pile all veg in a large saucepan, pour the stock over and boil until the potatoes are cooked.
Serving size is hard to tell - it depends how much liquid you put in! Generally a serving in a soup bowl for me would be around 500 grams.
