Introduction

Ingredients

    2 cups lentils, raw and uncooked
    1/2 c onion, chopped
    1/2 c celery, diced
    1/4 c carrot, chopped
    3 Tbs. Parsley, chopped (or substitute 1 Tbs. dry)
    1 clove garlic, minced
    8 cups chicken broth (can use low sodium)
    1/4 tsp black pepper
    1/2 tsp dried oregano
    2 cups canned tomatoes, diced
    2 Tbs. wine vinegar
    2 links smoked sausage (optional)

Directions

Rinse lentils. Put everything except the tomatoes, vinegar and sausage (if using) in a soup pot.. Cook on medium for 45-60, or until the lentils are cooked. Add the tomatoes, wine vinegar and sausage. Cook an additional 15-20 minutes.
