    3 large yams (about 1 kg) peeled and cubed (about 1/2 inch)
    1 cup orange juice (reconstituted)
    1 tsp orange zest or lemon zest
    1/4 cup brown sugar
    1 Tbsp cornstarch


Makes 10 1/2-cup servings.

Precook yams in microwave for about 8 minutes or until tender, but not too soft.
Place orange juice, zest, brown sugar and cornstarch in a 2 cup measuring cup and cook in microwave until thickened.
Pour over top of yams, stir in well and serve.
