Number of Servings: 8


    *3 medium yellow or red Potatos, diced
    1 Sweet potato, medium, diced
    Olive Oil, 2 tbsp
    Onions, raw, 1 medium, chopped
    Saffron, .25 tsp, a couple pinches
    1 large Yellow Peppers, diced
    1 large Red Peppers, diced
    Garlic, 2 cloves, chopped
    Paprika, 1 tsp
    Red Pepper, Flakes, 1 tsp
    Red Wine, 4 fl oz
    Organic Diced Tomatoes, 2 cups
    Chick Peas, 2.5 cups or 2 15 ounce cans
    Vegetable Broth, 2 cup
    Water, tap, 1 cup


Heat the oil. Add saffron, peppers, garlic and potatoes. Cook over med-low heat until the potatoes are tender-firm. Add paprika and pepper flakes and cook for a few minutes longer. Add in the wine and cook until juices in pan are thick. Add tomatoes, chick peas, broth and water to cover. Season with salt, dried parsley and pepper. Cover and cook over low heat until the potatoes are tender.
