Ingredients

    32 oz box Elbow Macaroni, cooked as directed
    1/4 cup Flour
    6 T Smart Balance Stick
    4 cups skim milk
    2 blocks (8 oz) Cabot Seriously Sharp Cheddar Cheese, grated
    3 large eggs, beaten
    1 tsp garlic powder
    1 tsp cajun seasoning

Directions

While macaroni is cooking, make a bechamel sauce with the flour, butter, skim milk. Add the cheddar cheese and stir until melted. Add seasonings. While whisking bristly, slowly add the beaten eggs. Remove from heat. Drain macaroni. Pour sauce over macaroni and stir to coat. Pour macaroni into a 13 x 9 pan sprayed with PAM. Bake for 20 minutes at 400 degrees. Makes about 16 one cup servings.
