    1 1/2 cups eggplant, chopped
    1/2 Tbsp olive oil
    1 cup cherry tomatoes, quartered
    3 1/2 tbsp green olives, chopped
    2 Tbsp fresh basil
    5 wedges Laughing cow light garlic and herb cheese


saute eggplant about10 minutes in olive oil. add tomatoes and heat until they release some moisture. Meanwhile beat eggs with salt, pepper, basil, olives and cheese. Pour this egg mixture over the other vegetables and cook over medium heat until it starts to set at the edges, then pop under the broiler to finish off the cooking.
