    1 can (14oz) Beef Broth
    2 Med. Potatoes, Cubed
    1 Cup Beef, Cubed
    3 Cups V8 Juice
    1 Can Crushed Tomatoes
    1 (10oz) Bag Frozen Mixed Vegetables
    1/4 tsp. Thyme
    1/8 tsp. Black Pepper


Place broth and potatoes in saucepan. Heat to a boil. Cover and cook over low heat 5 minutes or until potatoes are tender. Add beef, vegetable juice, tomatoes, vegetables,thyme and pepper. Cover and cook 15 minutes or until vegetables are tender.
Makes 6 servings.
