    1 Tbsp. oil
    3 chicken breast halves
    1 tsp. Mrs. Dash Chicken Grilling Blend
    9 cloves garlic, divided
    1/2 cup white wine
    1/2 cup low-sodium chicken broth
    1-1/2 oz. sun-dried tomatoes
    3 cups fresh spinach leaves


Pound three chicken breast halves to approximately 1/2 thickness. Cut each portion in half. Sprinkle with Mrs. Dash seasoning.

Heat oil in skillet over medium high heat. Saute chicken for three minutes on each side.

While chicken is cooking, peel garlic. Chop three of the cloves coarsely. Leave the remaining six cloves whole.

With kitchen shears, snip the tomatoes into 1/4 inch strips.

Remove the chicken to a plate. Add the chopped garlic to the skillet and stir for about thirty seconds. Add the wine, chicken broth, and tomatoes, and heat to boiling, scraping up the bits on the bottom of the skillet. Simmer for a couple of minutes.

Return the chicken to the pan, spooning the tomato and garlic mixture over the top, Tuck the whole cloves of garlic between the chicken pieces. Cover the pan and reduce the heat so that the wine and broth mixture is simmering. Cook for an additional 15 minutes.

While chicken is simmering, cut the spinach into strips. Put the spinach on top of the chicken, replace the lid, and cook for a few more minutes until spinach is just wilted.

1 breast portion plus 1/6 of vegetable mixture = 1serving.
