    1 bunch cilantro

    1/2 head garlic, peeled

    2 tablespoon oil

    2 jalapeno

    1 coarsely chopped onion

    1lb chicken or chicken cutlets cut in chunks and/or shrimp and/or chicken giblets

    3 cups chicken broth or 3 chicken bouillon with 3 cups water

    1 cup rice ( I prefer short grain rice for this soup), optional

    1 can mote (pozole or white corn), optional

    dash black pepper

    salt to taste

    lime wedges and avocado slices to garnish



Puree cilantro, garlic, jalapeno and 1 tablespoon oil

Heat 1 tablespoon oil in deep saucepan or pot over medium high heat.

Stir fry puree for 2 minutes or until fragrant, constantly stirring.

Add chicken and lightly brown, about 7 minutes.

Add chicken broth. Bring to boil.

Add 1 cup rice and 1 can mote, dash pepper, and salt to taste.

Simmer 20 minutes. Serve with lime wedges and avocado slices.

  • I was looking for a recipe to use up a big bunch of cilantro, so this worked. Very tasty and VERY spicy. I used brown rice instead of white. Wasn't sure if the rice was to be added cooked or raw. 1 cup of raw rice seemed like an awful lot, so used 1/4 cup raw brown rice. Good stuff. - 1/13/08
